Ingredients
  • 2Cans Northern White BeansDrained
  • 1Can Small White BeansDrained
  • 1Can Cannellini BeansDrained
  • 4 Roasted Poblano PepperChopped
  • 5Cloves garlicChopped
  • 2Medium OnionChopped (1 Large)
  • 2TBSP Butter
  • 1TBSP olive oil
  • 1 1/2TSP Salt
  • 1 1/2TSP Whiskey Smoked Pepperor Regular Black Pepper
  • 1TSP Black PepperFresh Ground
  • 1TBSP Flour
  • 2TSP Ground Cumin
  • 8OZ Creme Fraiche
  • 1/2Cup Pureed Roasted Pablano
  • 1 1/4LBS Boneless ChickenCut into 1/2 Inch pieces
  • 2Cups Chicken Broth
Instructions
Season Chicken
  1. Mix Chicken with Whiskey Pepper, Black Pepper and Salt. Set aside.
Saute
  1. Melt butter and oil to a large sauce pan
  2. Add Onion sprinkle with saute until translucent
  3. Add Garlic until heated through (1 Minute)
Chili
  1. Add Chicken to onion
  2. Saute for 10 Minutes stirring occasionally
  3. Add Chopped Pablano
  4. Add Chicken Broth
  5. Stir in Pablano Puree
  6. Add all beans
  7. Mix everything together
  8. Bring to a boil
  9. Reduce to simmer
  10. Stir in Creme Fraiche
  11. Simmer for 30 Minutes stirring occasionally

This chili can be made vegetarian by removing the chicken and adding a can of beans (Cannellini or small white Beans) and switch to vegetable broth
