Instructions
Cook Scallops
Season scallops with salt and pepper
heat heavy pan over med / high heat
melt butter
add olive oil
add scallops to pan start at 12 ‘clock place scallops moving clockwise (so order can be memorized)
Brown for 2 – 3 minutes (until opaque on the sides)
Flip and brown on the other side
Make Glaze
Add Cider, Champagne, Shallots, maple syrup, to pan used to cook scallops
Biol until consistency becomes think and saucy 5 – 10 minutes
Add scallops back to sauce until heated
