Maple Cider Scallops
Scallop recipe adapted from debi shawcross
Ingredients
Scallops
  • 2TBSP Butter
  • 2TBSP olive oil
  • Sea Scallops
  • Salt and Pepper
Maple Cider Glaze
  • 1/2Cup Hard CiderCrispin Honey Crisp
  • 1/2Cup Champagneor White wine
  • 1cup Heavy Cream
  • 1/2TSP Tymedried
  • 1/2Cup ShallotsChopped
  • 2TBSP Butter
  • 1/2Cup Maple syrup
Instructions
  1. Cook Scallops
  2. Season scallops with salt and pepper
  3. heat heavy pan over med / high heat
  4. melt butter
  5. add olive oil
  6. add scallops to pan start at 12 ‘clock place scallops moving clockwise (so order can be memorized)
  7. Brown for 2 – 3 minutes (until opaque on the sides)
  8. Flip and brown on the other side
Make Glaze
  1. Add Cider, Champagne, Shallots, maple syrup, to pan used to cook scallops
  2. Biol until consistency becomes think and saucy 5 – 10 minutes
  3. Add scallops back to sauce until heated
