Maple Cider Scallops

Ingredients
Scallops
- 2 TBSP Butter
- 2 TBSP olive oil
- Sea Scallops
- Salt and Pepper
Maple Cider Glaze
- 1/2 Cup Hard Cider Crispin Honey Crisp
- 1/2 Cup Champagne or White wine
- 1 cup Heavy Cream
- 1/2 TSP Tyme dried
- 1/2 Cup Shallots Chopped
- 2 TBSP Butter
- 1/2 Cup Maple syrup

Instructions
- Cook Scallops
- Season scallops with salt and pepper
- heat heavy pan over med / high heat
- melt butter
- add olive oil
- add scallops to pan start at 12 'clock place scallops moving clockwise (so order can be memorized)
- Brown for 2 - 3 minutes (until opaque on the sides)
- Flip and brown on the other side
Make Glaze
- Add Cider, Champagne, Shallots, maple syrup, to pan used to cook scallops
- Biol until consistency becomes think and saucy 5 - 10 minutes
- Add scallops back to sauce until heated
