Maple Cider Scallops

Scallops
  • 2 TBSP Butter
  • 2 TBSP olive oil
  • Sea Scallops
  • Salt and Pepper
Maple Cider Glaze
  • 1/2 Cup Hard Cider Crispin Honey Crisp
  • 1/2 Cup Champagne or White wine
  • 1 cup Heavy Cream
  • 1/2 TSP Tyme dried
  • 1/2 Cup Shallots Chopped
  • 2 TBSP Butter
  • 1/2 Cup Maple syrup

  • 2 TBSP Butter
  • 2 TBSP olive oil
  • Sea Scallops
  • Salt and Pepper
Maple Cider Glaze
  • 1/2 Cup Hard Cider Crispin Honey Crisp
  • 1/2 Cup Champagne or White wine
  • 1 cup Heavy Cream
  • 1/2 TSP Tyme dried
  • 1/2 Cup Shallots Chopped
  • 2 TBSP Butter
  • 1/2 Cup Maple syrup
Instructions
  1. Cook Scallops
  2. Season scallops with salt and pepper
  3. heat heavy pan over med / high heat
  4. melt butter
  5. add olive oil
  6. add scallops to pan start at 12 'clock place scallops moving clockwise (so order can be memorized)
  7. Brown for 2 - 3 minutes (until opaque on the sides)
  8. Flip and brown on the other side
Make Glaze
  1. Add Cider, Champagne, Shallots, maple syrup, to pan used to cook scallops
  2. Biol until consistency becomes think and saucy 5 - 10 minutes
  3. Add scallops back to sauce until heated
