Ingredients
  • 2Lbs FishTraditionally mackeral, promfret Gulf coast I like snapper but any fish will do, whole/fillet/steak
Marinade
  • 2TBSP Kashmir Chili Powder
  • 1TSP Tumeric Powder
  • 1/2TBSP Salt
  • 1TBSP Ginger Garlic Paste
  • 1TBSP Corn Starch
  • 2TBSP Tamarind Pastesubstitute lime juice, vinegar or tamarind water
Masala
  • 8-12 Dried ChilisByyadagi or Kashmiri based on spice level desired
  • 3TSP Coriander Seeds
  • 2TSP Cumin Seeds
  • 1TSP Black Pepper
  • 1Pinch Fenugreek5-6 seeds
  • 10Leaves Curry Leaves
  • 3Cloves garlic
  • 1Inch Ginger
  • 1TSP Ghee
  • 1Ball Tamarindabout ping pong ball or marble shooter
Ghee Roast
  • 3TBSP Ghee
  • 12Leaves Curry Leaves
  • 1Pinch Jaggeryor sugar
Instructions
Marinade
  1. Thickly coat fish on all sides Marinate for at least 30 Minutes
Masala
  1. Add all ingredients to pan
  2. Roast for two minutes, stirring occasionally
  3. Let cool
  4. Add Tamarind ball
  5. Blend into a paste
Ghee Roast
  1. Melt Ghee
  2. Add curry leaves
  3. heat until spatters, 2 minutes
  4. Add masala
  5. Cook 12-15 minutes until color changes to a dark brown
  6. Adda pinch of Jaggery or sugar
  7. Cover and cook for 10-12 minutes, Ghee will separate
  8. Coat fish with sauce on both sides
  9. Cook for 2-3 minutes per side
