Mangalorean Ghee Fish Roast

Ingredients
  • 2 Lbs Fish Traditionally mackeral, promfret Gulf coast I like snapper but any fish will do, whole/fillet/steak
Marinade
  • 2 TBSP Kashmir Chili Powder
  • 1 TSP Tumeric Powder
  • 1/2 TBSP Salt
  • 1 TBSP Ginger Garlic Paste
  • 1 TBSP Corn Starch
  • 2 TBSP Tamarind Paste substitute lime juice, vinegar or tamarind water
Masala
  • 8-12 Dried Chilis Byyadagi or Kashmiri based on spice level desired
  • 3 TSP Coriander Seeds
  • 2 TSP Cumin Seeds
  • 1 TSP Black Pepper
  • 1 Pinch Fenugreek 5-6 seeds
  • 10 Leaves Curry Leaves
  • 3 Cloves garlic
  • 1 Inch Ginger
  • 1 TSP Ghee
  • 1 Ball Tamarind about ping pong ball or marble shooter
Ghee Roast
  • 3 TBSP Ghee
  • 12 Leaves Curry Leaves
  • 1 Pinch Jaggery or sugar

Ghee Roast
  • 3 TBSP Ghee
  • 12 Leaves Curry Leaves
  • 1 Pinch Jaggery or sugar
Instructions
Marinade
  1. Thickly coat fish on all sides Marinate for at least 30 Minutes
Masala
  1. Add all ingredients to pan
  2. Roast for two minutes, stirring occasionally
  3. Let cool
  4. Add Tamarind ball
  5. Blend into a paste
Ghee Roast
  1. Melt Ghee
  2. Add curry leaves
  3. heat until spatters, 2 minutes
  4. Add masala
  5. Cook 12-15 minutes until color changes to a dark brown
  6. Adda pinch of Jaggery or sugar
  7. Cover and cook for 10-12 minutes, Ghee will separate
  8. Coat fish with sauce on both sides
  9. Cook for 2-3 minutes per side
