cacio e pepe

Ingredients
- 6 ounces pasta spaghetti
- 3 TBSP Unsalted Butter Divided If you only have salted adjust salt later
- 3/4 Cups Grated Parmesan
- 1/3 Cups Grated Pecorino Romano
- 1 TBSP Fresh ground Black Pepper

Instructions
- Cook Pasta in salted water Remove before fully cooked reserve water
- 2 Melt TBSP of butter in saute pan
- add pepper cook for 1 minute
- add 1/2 cup of pasta water Bring to simmer
- add pasta
- add 1 TBSP Butter
- add Romano cheese Toss until melted
- Remove form heat
- Add Parmesan Toss till mixed If too dry add more pasta water
- Serve with grated cheese
- Add salt to taste (probably not needed)
